AyFish specializes in the production of premium Turkish Salmon and sturgeons.




AyFish Rainbow Trout
AyFish Turkish Salmon stands out for its strong shape, clean skin, and vibrant color—qualities achieved through careful genetics and farming practices. We begin with triploid eggs from trusted partners specializing in selective breeding for growth, quality, and appearance.
After import, the eggs are incubated at our hatchery in Muğla, where our in-house veterinary and technical team oversee fish health from the earliest stage. We use probiotics at the hatchery to support immune strength and reduce antibiotic use over time.
Once fish reach 10–50 grams, they are transferred to our farms across Türkiye. At higher weights, we also produce salmon at the Black Sea with our partners. AyFish Turkish Salmon can be grown up to 10 kg and is available in various sizes and formats, tailored to customer specifications.






AyFish Sturgeon
AyFish manages one of the world’s largest sturgeon programs, focused on long-term production of premium meat and caviar. With over 1,000 tonnes of live sturgeon currently under care and plans to double this capacity, we are shaping the future of sturgeon farming in Türkiye.
While Beluga and Oscietra caviar will enter the market in 2027, sturgeon meat is already available for export. In close dialogue with the Ministry of Agriculture and Forestry, AyFish is developing initiatives to support the repopulation of Turkish rivers flowing into the Black Sea through future fingerling release programs. These efforts are part of our commitment to building a self-sufficient and sustainable sturgeon sector in Türkiye.
